Spicy Vegan Tacos

Yup, vegan tacos too.

Serves: 4

Mexican Lentils

1 cupLentils, uncooked
2 cupsWater
1 cupSalsa (hot)

To serve:

8 – 12 pcsTaco Shells
1 largeAvocado, mashed
2 mediumTomato, diced
1/2 cupLettuce leaves, shredded
Cilantro Leaves
Hot Sauce

Instructions – Spicy Vegan Tacos

  1. Boil lentils in water for 30 minutes or until just cooked (don’t allow them to become mushy), drain off extra liquid.
  2. Combine the lentil with the salsa in a medium saucepan and bring to a simmer for 5 – 10 minutes.
  3. Serve the Mexican lentils stuffed in taco shells topped with diced tomatoes, lettuce, mashed avocado, fresh cilantro leaves and a drizzle of hot sauce.
  4. Serve immediately and enjoy.
