|1 cup||Lentils, uncooked|
|1 cup||Salsa (hot)|
|8 – 12 pcs||Taco Shells|
|1 large||Avocado, mashed|
|2 medium||Tomato, diced|
|1/2 cup||Lettuce leaves, shredded|
Instructions – Spicy Vegan Tacos
- Boil lentils in water for 30 minutes or until just cooked (don’t allow them to become mushy), drain off extra liquid.
- Combine the lentil with the salsa in a medium saucepan and bring to a simmer for 5 – 10 minutes.
- Serve the Mexican lentils stuffed in taco shells topped with diced tomatoes, lettuce, mashed avocado, fresh cilantro leaves and a drizzle of hot sauce.
- Serve immediately and enjoy.
