Serves: 4
Mexican Lentils
1 cup | Lentils, uncooked |
2 cups | Water |
1 cup | Salsa (hot) |
To serve:
8 – 12 pcs | Taco Shells |
1 large | Avocado, mashed |
2 medium | Tomato, diced |
1/2 cup | Lettuce leaves, shredded |
Cilantro Leaves | |
Hot Sauce |
Instructions – Spicy Vegan Tacos
- Boil lentils in water for 30 minutes or until just cooked (don’t allow them to become mushy), drain off extra liquid.
- Combine the lentil with the salsa in a medium saucepan and bring to a simmer for 5 – 10 minutes.
- Serve the Mexican lentils stuffed in taco shells topped with diced tomatoes, lettuce, mashed avocado, fresh cilantro leaves and a drizzle of hot sauce.
- Serve immediately and enjoy.
